The Cherasco Method is not limited to farming protocols. It connects production standards, technical assistance, operator training, collection, processing and market organisation within a single development model.
Each project is adapted to local climate, soil, water availability, infrastructure and commercial objectives. The aim is to establish the technical and organisational capabilities required for the supply chain to operate progressively with local autonomy.

Preliminary assessment
Climate, soil, water, logistics, available land and production objectives are assessed before the project is defined.

Economic planning
Investment, operating costs, expected production, development phases and reference markets are organised into a project-specific business framework.

Technical design
Farming areas, enclosures, irrigation, protection systems, operational flows and support facilities are designed for the selected site.

Training and know-how transfer
Technical teams and operators are trained to apply the protocol, manage production and monitor the first operating cycles.

Supply-chain development
Production is connected to breeding, collection, food processing, Muller extraction, quality systems and commercial development according to the project scope.
THE CHERASCO METHOD
A production protocol designed to become an operating standard.
The Method defines how farms are designed, supplied, managed and monitored. Outdoor production, selected young snails, planned feeding, certified seeds, irrigation, protection systems, traceability and technical support are coordinated within one documented framework.
The protocol can be adapted to different territories without losing the controls that make production measurable and repeatable.

LEADERSHIP
Simone Sampò
International heliciculture expert and Director of the International Institute of Heliciculture of Cherasco.
For more than two decades, Simone Sampò has worked on the transition from individual snail farms to organised production systems connected to processing and markets.
Since taking responsibility for the Institute in 2016, he has led the development of the Cherasco Method, coordinated projects in Europe, North Africa and the Caucasus, and built relationships with agricultural organisations, universities and public institutions.
