From 1973 The National Institute of Heliciculture in Cherasco is the most important avant-garde center in Europe which promotes the protection and diffusion of the snail.
A growing Economy
In 2023, the Cherasco Method for snails fully adopted the Short Natural Cycle, finally achieving the long-hoped-for successful harvests. The buyback value has increased exponentially, placing it globally between 4.5 and 5.5 euros per kilogram.
